My terrific girl!!

Ky scored the Terrific Kid award again this 9 weeks! She got it the first 9 weeks in PE and this time in her "regular" class! Way to rock the school baby girl! You are awesome!!

Saturday night supper



A nice, big, healthy Saturday night supper around the table with my family....LOVE!!
We had a big ole honkin salad, black bean burgers, and chick pea cookie dough!

So, I never in a million years thought my family would eat a meal like this....however Friday night mom kept the kids (like she does almost every Friday night) Joey and I went to Moresville to an awesome burger joint. I got a black bean burger and it was delish. Joey wanted to taste it, I thought he would either spit it out or throw up (he typically hates food like that) Anyway, he took a bite and loved it!! We googled the recipe, went to Super target bought the ingredients and whipped us up some of those bad boys!! YUM!!
As far as the chick pea cookie dough, it was just a recipe I'd seen online. I thought it was awesome....the family not so much.
The whole supper was so easy to make. We will definitely be having those burgers again soon!
Here's the recipe I used:

Ingredients

  • 1 (16 ounce) can black beans, drained and rinsed
  • 1/2 green bell pepper, cut into 2 inch pieces
  • 1/2 onion, cut into wedges
  • 3 cloves garlic, peeled
  • 1 egg
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon Thai chili sauce or hot sauce
  • 1/2 cup bread crumbs

Directions

  1. If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
  2. In a medium bowl, mash black beans with a fork until thick and pasty.
  3. In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
  4. In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
  5. Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
  6. If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

                            I made a few adjustments: instead of the chili powder, cumin and hot sauce I used a pack of swiss and mushroom burger seasoning mix. (Target brand) I didn't use green peppers, cause I forgot to buy them, and I used more than half a cup of bread crumbs.

The kids were out of school Monday and Tuesday for the end of the semester. So we took 5 days and went away! We went to Columbia to a house my aunt and uncle own. (they actually own 2 houses on the lake, they live in one and the other is their "vacation" house, that's where we stayed.) It's beautiful, it's on the lake obviously but there are no other houses around, it's surrounded by woods....nice!

Re-thinking our next cruise



A Costa Cruise ship went down last night in Italy!! Yikes! Costa Cruise is a division of Carnival. 3 people are dead and 70 more missing.....dang that's pretty scary!

 

Much better week

So after being sick and working all of last week I finally got a break this week. I was off all week so I did a little lot of shopping, breakfast with my peeps, and some r & r....much better week!!

We had a party last night, then slept til 10am this morning. For once we have nothing to do on a Saturday! What a great day to relax!!

Not a good start to 2012


I've been sick since Tuesday.....working late every day, coming home, showering, and going straight to bed! The kids are with my parents tonight so I'm hoping to sleep all weekend and be back to normal by Monday! I sure hope the rest of 2012 isn't as bad!

My kids got candles for Christmas!






Both kids got an Amazon Kindle Fire for Christmas. They call them "Candles" It's funny when someone ask them what they got and they say "A candle!!" They love them! Kylin has watched a million Justin B videos on YouTube, and downloaded Junie B Jones books and Layton plays games on his!

Kylin and Kasie were trying on sunglasses.....I looked at the price and about had a heart attack....please tell me people don't pay hundreds of dollars for sunglasses! The most I've ever spent on sunglasses was about $10.





We spent 2 hours in this candy store, best place ever!
