Saturday night supper



A nice, big, healthy Saturday night supper around the table with my family....LOVE!!
We had a big ole honkin salad, black bean burgers, and chick pea cookie dough!

So, I never in a million years thought my family would eat a meal like this....however Friday night mom kept the kids (like she does almost every Friday night) Joey and I went to Moresville to an awesome burger joint. I got a black bean burger and it was delish. Joey wanted to taste it, I thought he would either spit it out or throw up (he typically hates food like that) Anyway, he took a bite and loved it!! We googled the recipe, went to Super target bought the ingredients and whipped us up some of those bad boys!! YUM!!
As far as the chick pea cookie dough, it was just a recipe I'd seen online. I thought it was awesome....the family not so much.
The whole supper was so easy to make. We will definitely be having those burgers again soon!
Here's the recipe I used:

Ingredients

  • 1 (16 ounce) can black beans, drained and rinsed
  • 1/2 green bell pepper, cut into 2 inch pieces
  • 1/2 onion, cut into wedges
  • 3 cloves garlic, peeled
  • 1 egg
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon Thai chili sauce or hot sauce
  • 1/2 cup bread crumbs

Directions

  1. If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
  2. In a medium bowl, mash black beans with a fork until thick and pasty.
  3. In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
  4. In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
  5. Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
  6. If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

                            I made a few adjustments: instead of the chili powder, cumin and hot sauce I used a pack of swiss and mushroom burger seasoning mix. (Target brand) I didn't use green peppers, cause I forgot to buy them, and I used more than half a cup of bread crumbs.
